2 recipes I have cooked recently that have been delicious:
Recipe #1 we shall call "American stir-fry beef flanks":
package of wafer thin beef flanks. sprinkle with garlic salt, salt, pepper, and meat tenderizer. Then splash some Worcestershire sauce over the top of the flanks. while you let this sit, start some pasta or rice or both. Also chop your veggies. I cut up one onion, bell pepper, and Roma tomato. I do not cut the pieces too small. maybe the size of a nickel. have tablespoon of minced garlic ready with veggies.
heat up some olive oil in a large skillet or wok. once heated up to medium-high heat or maybe a little higher, then throw in the beef flanks. brown on each side for maybe a minute a piece or less. just until browned. move beef flanks to plate or bowl. try and keep as much juices with the beef flanks as you can.
add more olive oil if needed. throw in veggies and garlic and saute for about 5 minutes. while veggies are cooking, cut up beef flanks into strips about the size of your thumb (don't cut your thumb though). then throw in the beef flanks and juices with the veggies. stir and cook for about 10 minutes.
If you made pasta, then you will now want to mix together a mixture to toss in with the pasta. mix about 1/2 cup of olive oil, salt, garlic salt, parsley flakes, basil flakes, and about 1/4 tsp of minced garlic. stir then toss with pasta.
Serve with steamed rice or pasta.

Recipe #2 i found out of the Taste of Home magazines that Cindy bought me when she came to visit. she found a stack of about 50 wrapped together and on sale very cheap at Half Price books. I LOVE THEM. L.O.V.E them SOOOOOO much. I am now a recipe junkie. I love browsing around my TOH magazines for dinner ideas.
It is called Fisherman's Crispy Coating. I did modify it some because of my lack of some ingredients. so this is my own personal version of it ;)
I used steelhead trout for this recipe. this is a nice fish. it is pink like salmon but tastes better in my opinion. plus it is a tad bit cheaper. at my HEB it is farm raised and full of wonderful stuff that makes you healthy and strong. it is supposedly antibiotic free. You will need 1 pound of whatever fish you choose.
in shallow bowl mix together one egg with one cup of milk and 2 tablespoons of lemon juice.
In a large resealable bag, mix together 1 cup CRUSHED crisp rice cereal, 1/4 cup flour, 1/4 cup cornmeal, dash of pepper, 1/4 tsp of seasoned salt or all-purpose seasoning, 1/4 tsp of garlic salt.
Dip fish in egg mixture, then coat with mixture in bag.
I did not put the mixture into resealable bag, I put it in the bowl and learned the hard way why they said put it in a bag and shake. because if you use a bowl, by the time you get to the last few fish, the mixture is too gooey to stick to the fish. so to fix that problem, i just added more cornmeal at the end.
Add 1/4 inch of olive oil (or whatever oil you use) into large skillet over medium-high heat. fry fillets for 5-7 minutes on each side. Serve.

This all sounds delish Sandra! I've never bought the wafer beef flank - I'll have to look for that in the store.
